My first attempt at making raw cheese
at home! I used raw organic cow milk (just over 1 litre), a pinch of mesophilic starter (about 1/16th of a teaspoon), mixed it up, let sit for half an hour, then added 1/10th drop rennet, let sit in a warm place for 20-24 hours, until it seperated into curds and whey, then drained the curds.
Also, in there somewhere is cream cheese, which i made by just letting some milk sit out overnight till it separated, then drained the solid cream cheese in a cheesecloth.
I mixed it up with chives and some salt, and had some for lunch! :)
Recovering from wisdom tooth extraction, watching an Anthony Bourdain show set in France, I was inspired to get out my French sets.
I find the grater funny in this set, 'cause I don't think any of these cheeses would ever be grated...!
